One of the Greeks most favourite foods are pies. Think Spanakopita, Manitaropita or Sfakianopita, and they all have one thing in common – cheese!  Pies such as the Tiropita in Greece, are considered some kind of a unique specialty. They are a food that gives a Greek a homey feeling. Growing up in a Greek home it’s a dish that the mother or grandmother usually masters. Pies, other than being sooo delicious, also give you the opportunity to have a piece whenever you are hungry.

Saying that, tiropita or pita for short is my favourite, and I promise that this recipe will amaze your friends and family with its crispy and tangy flavour! A mature feta gives this traditional Greek cheese pie a bold and salty flavour, so be careful with how much salt you add in the seasoning!

Tiropita – Greek Pita

For the Pastry

  • 2 cups Olympian Special White Flour
  • 1 pinch Salt
  • 1/2 cup Respect Olive Oil
  • 200 ml Water
  • 1/2 cup Unsalted Butter
  • 2 tbsp Vinegar

For the Cheese

  • 250 g Ricotta Cheese
  • 250 g Omiros Feta Cheese

To Make the Filling

  1. Mix the filling ingredients together in a medium bowl by creaming the feta and ricotta first.  Make sure that the filling mixture is smooth and well combined.  

To Make the Pastry

  1. Make a soft dough combining flour, salt, vinegar, olive oil and water.

  2. Melt the butter in a saucepan on low heat then add oil once melted.

  3. Portion the dough in small round balls, roll out, brushing with melted mixture. Cover with plastic. Wrap to avoid drying out. Let the dough rest for half an hour before beginning the next process.

  4. Prepare the work surface by placing a clean tablecloth.

  5. Place the dough on the work surface, start stretching out until 80-100cmin diameter or until your dough cannot be stretched and starts to tear. Tear off the thick dough that’s left on the outer as shown in the video. 

  6. When you have rolled out the required diameter, brush approximately 3 tablespoons of your melted butter and oil around the dough and spread with your brush lightly trying not to tear the dough.

  7. With a spoon or your hand sprinkle the feta over the stretched dough.

  8. Start rolling the pastry by lifting the table cloth and letting the dough roll on its own. By doing this, it will ensure a thin and crispy pastry.

  9. Once you have a circle shape, start to roll into a spiral.

  10. Once you have a large spiral, lightly brush with your butter and oil and then bake in the preheated oven for 25 – 30 mins.
