Trahana is one of the oldest foods in the Eastern Mediterranean, a tiny, pebble-shaped grain product that varies widely all over Greece and this is just about the simplest dish to make with trahana.  I think that it’s best made during the summer when you can get ripe, luscious tomatoes… but can be made anytime of the year as it ‘s also perfect for cold winter days as it literally warms your soul.

 

Trahanas Tomato Soup

  • 1 cup <p class="p1">Olympian Sweet Trahana</p>
  • 4 cups Water or vegetable stock
  • 1 tbsp Parsley, chopped
  • 2 Tomatoes
  • 1/2 cup Feta, grated
  • 2 Cloves garlic, crushed
  • Olive Oil
  • Salt and pepper
  1. Heat olive oil with garlic. Add tomatoes, salt and pepper and simmer.

  2. Add water/stock bring to boil.

  3. Add trahanas cook until tender.

  4. When cooked remove from heat and sprinkle parsley.

  5. Serve with grated feta.
