Olive Oil Cake

Olive oil cake is a classic throughout Greece and once you have a taste you’ll know why. Somehow it works…all the flavours sing in perfect harmony and the cake is extremely moist and, in this recipe, whipping the sugar with the whole eggs produces a fine and rather airy texture. While some people may think that these cakes will have an overwhelming olive oil flavour, but nothing could be further from the truth. If you use a good quality, fruity olive oil, you will find it to be really delicate, with a just a hint of lemon.

Tiropitakia

These little individual cheese triangles (tiropitakia) are the quintessential Greek snack food. They’re very popular in Greek cuisine and come in a variety of shapes such as individual rolls, half-moons, little croissants or triangles. The saltiness of the Greek cheeses pairs so nicely with phyllo dough. In Greece they’re popular for a late breakfast, I’ll eat them whenever I want!!

Prosforo

Prosforo, pronounced PROHS-foh-roh, means "offering" and is made by members of the Greek Orthodox faith as altar bread for celebrations of the Divine Liturgy. The bread consists of two loaves baked together, one placed on top of the other. The double loaf represents the divine and human nature of Jesus Christ, and each loaf is stamped with a special seal. Traditional Greek homes reserve a pan that is used only for making prosforo.

Spanakopita

If you have not tried Spanakopita before, you’re in for a treat! Spanakopita is a delicious savoury Greek pie made of perfectly crispy layers of phyllo dough and a comforting filling of spinach, feta and ricotta cheese.  Spanakopita makes a great side dish next to lamb or lemon chicken, but it can also easily stand alone as the main dish.
