Trahana is a wheat product that is eaten throughout Greece and the Eastern Mediterranean and is usually added to soups and stews, and is also eaten as a porridge. This is a really easy breakfast dish that can be whipped up in a few moments and perfect for people that love a high carb start to the day or a warming dish for the kids.
These little individual cheese triangles (tiropitakia) are the quintessential Greek snack food. They’re very popular in Greek cuisine and come in a variety of shapes such as individual rolls, half-moons, little croissants or triangles. The saltiness of the Greek cheeses pairs so nicely with phyllo dough. In Greece they’re popular for a late breakfast, I’ll eat them whenever I want!!
Prosforo, pronounced PROHS-foh-roh, means "offering" and is made by members of the Greek Orthodox faith as altar bread for celebrations of the Divine Liturgy. The bread consists of two loaves baked together, one placed on top of the other. The double loaf represents the divine and human nature of Jesus Christ, and each loaf is stamped with a special seal. Traditional Greek homes reserve a pan that is used only for making prosforo.
If you have not tried Spanakopita before, you’re in for a treat! Spanakopita is a delicious savoury Greek pie made of perfectly crispy layers of phyllo dough and a comforting filling of spinach, feta and ricotta cheese. Spanakopita makes a great side dish next to lamb or lemon chicken, but it can also easily stand alone as the main dish.
Hilopites are small, square egg noodles and every Greek family and Greek restaurant has a different recipe for hilopites with some type of meat (beef, lamb, or chicken). If you can find Greek cheese (kefalotiri or mizithra), use grated over the top of your finished masterpiece, if not parmesan will work just as well.
Without argument, vegetables are the cornerstone of a healthy diet and regardless of what else you eat, adding more ‘plants’ into your day will result in improved health long term. If you’re stuck in a vegetable rut why not try something new? This recipe is an absolute cracker as it’s just so easy and it takes less than 30 minutes to prepare!!
When it comes to comfort food, there's nothing better than meatballs! Meatballs are also the easiest way to add protein to almost any dish, but are just perfect. The breadcrumbs soaked in milk are used to help bind the meat together.. and make the meatballs perfect every time!
Not a lot can beat a lovely cheesy pasta bake served up with a big side of salad (obviously that makes it healthy…….!!) but add in bacon and this is one of those dinners that the kids will polish off in no time!!! This dish is perfect eaten for cold for lunch the next day too – although you can heat it up in the microwave with a tablespoon of water – to stop it drying out.
